What is the difference between true cinnamon and Cassia?

True Cinnamon and Cassia are closely related, sharing the same genus Cinnamomum. What most people in the U.S. think of as “cinnamon” is actually Cassia (Cinnamomum cassia). Cassia has a fairly simplistic, assertive flavor profile with a pungent bite and can be grown all over South East Asia and China making it relatively inexpensive. True Cinnamon (Cinnamomum verum ) is grown almost exclusively in Sri Lanka and has a delicate, complex flavor with hints of citrus.
